What’s better than banana bread? Banana bread covered with a streusel crumb topping and infused with coffee. This breakfast treat is full of cinnamon spice and has a fantastic texture. You can’t actually taste the coffee; it just acts as a base to ground the sweet banana flavor. The streusel topping is so good (it’s really hard to not eat it right off the bread). Banana Bread Batter
  1. 3 bananas, mashed
  2. ½ cup strong coffee
  3. ¼ cup vegetable oil
  4. 2/3 cup brown sugar
  5. 2 eggs
  6. ½ cup buttermilk
  7. 2 cups flour
  8. 3 Tablespoons cornstarch
  9. 2 teaspoons baking powder
  10. 1 teaspoon baking soda
  11. 2 teaspoons cinnamon
  12. ½ teaspoon salt
  13. ¼ teaspoon nutmeg
Walnut Coconut Streusel Crumb Topping
  1. ¼ cup butter
  2. ½ cup all purpose flour
  3. 1/3 cup sugar
  4. 1 teaspoon cinnamon
  5. 1/3 cup walnuts, finely chopped
  6. 1/3 cup coconut flakes
  1. In a large bowl, combine the mashed bananas and coffee. Whisk in the vegetable oil, brown sugar, eggs, and buttermilk. Combine the dry ingredients (flour through nutmeg). Add the wet ingredients to the dry, and stir just until combined
  2. Combine dry ingredients for streusel. Cut in butter. Stir in walnuts and coconut. Sprinkle over banana bread batter.
  3. Bake 50-55 minutes at 350 degrees Fahrenheit in a 9x5 inch loaf pan. The bread is done when a toothpick inserted in the center comes out clean. This banana bread is best enjoyed warm with butter ☺
